Black Bean Soup
      serves 4
      
        Ingredients
        
            - 7 C	chicken stock
 
            - 2 C	dried black beans, soaked overnight
 
            - 1 C	medium hot salsa
 
            - 1 ea onion, minced
 
            - 1 cl garlic, minced
 
            - 1 t	cumin
 
            - sour cream
 
            - cilantro
 
        
       
      
        Instructions
        
            - Bring the stock to a boil, then add the beans, salsa, onion, garlic and cumin. Simmer until the beans are tender, about 1 1/2 hours, stirring often.
 
            - Place in slow cooker on low for 1 hour, or simply remove from heat and let stand 1 hour, covered. Season to taste.
 
            - Plate, garnish with sour cream and cilantro, and serve.
