Black Bean Soup

Instructions

  1. Bring the stock to a boil, then add the beans, salsa, onion, garlic and cumin. Simmer until the beans are tender, about 1 1/2 hours, stirring often.
  2. Place in slow cooker on low for 1 hour, or simply remove from heat and let stand 1 hour, covered. Season to taste.
  3. Plate, garnish with sour cream and cilantro, and serve.
